Eden Meat Market revealed its plan to rebuild after a November fire, moving the market from downtown Eden to be attached to Eden Cafe and Eden Corner Express. The design of the building is subject to change.

FOND DU LAC — Amid its rebuild, Eden Meat Market has been working to maintain its classic and award-winning products in stores, which now includes the reintroduction of venison processing.

Last fall, a fire broke out in the original meat market's butcher shop, and since then, the business adapted to continue as many of its services as it could, including moving pizza and meat cutting production to Eden Grill, operating catering out of Eden Cafe and eventually resuming brats and sausage links.

Additionally, the owners — the Duehring and Hermann families — were already planning to expand the meat market, but after the fire, they decided to move the business from downtown Eden to the corner of county roads B and V, attached to Eden Café and Eden Corner Express, 301 W. Main St., according to part-owner Jeff Duehring.

As of October, the projected completion date for the new meat market is next spring. The groundbreaking is expected at the end of the month.

In September, Eden Meat Market announced on its Facebook page it will accept whole deer and boneless trimmings for processing this season. Its original location at 115 E. Main St. has been restored and approved for venison processing only and will be open for whole deer or clean trimmings drop-off and pick-up from 8 a.m. to 5 p.m. Mondays through Fridays and 8 a.m. to noon Saturdays. No other products or services will be offered at that location.

Skinning, cutting and wrapping costs $129, with a $20 credit if you have your entire deer made into sausage products. Specialty venison products include bacon, pot pie, stew, meat loaf and sloppy joes. Hunters can also take in other game, such as elk, pheasants, ducks and geese.

Over the past year, the meat market also introduced several new products and flavors, including honey sriracha baby brats, cheesy pizza dippers, breakfast pizza and burrito bowls. Its award-winning Slim Jims resumed in February in small batches, with the help of Salchert Meats in St. Cloud for its smokehouse.

These are sold at Ledgeview Express, N7593 Taycheedah Way in Fond du Lac; Eden Corner Express, 301 W. Main St. in Eden; and Heritage Ridge Travel Plaza, 1705 Shaler Drive in Waupun.
